    The bones go in before sunrise, at a rolling boil.

  2. All day on the stove

    Topped up, skimmed and stirred until the broth turns rich and silky.

  3. Tare in the bowl

    Salt, soy or miso goes in first. It decides what the bowl tastes like.

  4. Noodles to order

    Cut that morning, boiled to your firmness, drained with a snap.
